The etymology remains rather vague. However, if we refer to the rare works from the end of the 19th century dealing with the subject, this name could come from a choice cut of pork, highly reputed in the Lyon region. Nevertheless, if we believe another hypothesis advanced by certain etymologists, the word would come from a Latin root turlus, common with, notably, the term "turlute".
