The root gal- is related to the German gallert, gallertig ('jelly, gelatinous') and is probably borrowed from the Ragusian galatina, derived from the Latin gelare ('to freeze') with non-palatalization treatment and a shift from /e/ to /a/ specific to the Dalmatian domain, rather than a Gallo-Roman result of a reconstructed type galare (for gelare) observed among others in the Old French galee (sauce, ruin). See also the Old French galentir, the original meaning may be 'breaded, baked fish' subsequently associated with jelly.
